Atelier Perceval - Le Francais Damascus Ebony The classic from France made by hand Extremely thin ground stainles damascus steel The Le Francais is already something of a modern classic of the French knife culture and is, along with the L08, one of Perceval's most popular models. Due to the thin, extremely cutting blade and the very universal handle, it is suitable for a whole range of cutting tasks that occur in everyday life. At the same time, the knife does not attract attention in any way and even makes a really good picture in a restaurant. Thanks to the small leather case it can be carried comfortably in your pocket without scratching the beautiful handle. Although we are dealing with a quite modern knife design, the roots of Le Francais go back to the 17th century. Already in this long past time, French farm workers used a very similar looking knife. The Le Francais is locked by a cleanly engaging liner lock, which is wonderfully easy to unlock. Due to the small nail hammer the knife can be opened easily with two hands. The wonderfully pointed blade is very well suited for fine work and the cutting edge, which is sharpened on buffalo leather, comes with an enormous sharpness. The damascus steel used is rust resistant and therefore completely unproblematic in combination with food. All in all you get a really great piece of French knife culture, which will surely take a special place in your collection.  This Ebony, comes from Gabun (Central Africa) and varies from yellow to dark brown. Makassar ebony is characterized by a longitudinal grain. It is very dense and color-fast. Please note, each knife is unique and differs from the knives shown in the picture, because the selected materials are natural materials.

Grinding Stone Arkansas Super Arkansas chunk. The light side has a 400 grit, this is a European grit size. This corresponds to a 1000 grit in the Japanese standard. The darker side has a 240 grit (=380 Japanese grit). This makes the dark side very coarse. The light side, i.e. the Arkansas is well suited for keeping your knife sharp. Please use the coarse side only if your knife is already very dull. We recommend to use the Arkansas chunk with oil (for example Balistol Universal Oil), as this will make the sharpening result even finer.Please never use sharpening stones dry. With the wonderfully rounded curve of the handle, the L08 is slightly reminiscent of the rear of an old Cadillac - here the manufacturer has managed to combine the time-honored tradition of knife making in France with the modern design of the 20th century.The result is a wonderfully coherent-looking knife, which also lies wonderfully in the hand. The Sheepfoot blade, which is rounded towards the tip, allows for safe work and proves to be extremely cutting-friendly.This is due on the one hand to the flat ground up to the back of the blade and on the other hand to the extremely thin cutting bevel. Perceval sharpen their knives all by hand on slowly rotating grinding stones. The final honing is also done - quite traditionally - on a strap made of buffalo leather. An absolute highlight is the extremely satisfying sound when the liner lock engages. Here you simply notice how precisely these knives are made.
